Garlicky, baked, and fresh!

Its been awhile since we updated our posts, but don’t be fooled.. We’re still eating good. 🙂

Three weeks ago we made this Galicky mashed potato with bacon gravy,

served with a simple roast chicken legs and my very own asian-fusion bruschetta.

Got Curry?

Alright, so when it comes to curry I must admit everyone instantly jumps to thinking Indian. Well the Chinese has our own take on it, and it’s one of my favorite. So, last week we made this wonderful curry at home, but we forgot to take pictures. So, this post will be recipe only.. If you must put a picture on it I guess it looks like good ol’ curry lol.

Ingredients:
– 2 Chicken boneless fillets
– 2 Medium gold potatoes
– 1/2 White or yellow onion
– 1 Clove of garlic
– 1 Tsp Chinese curry powder
– 1/2 tsp of Cumin powder
– 1 1/2 Cup chicken stock
– 1 Tsp Butter
– Salt & Pepper to taste

Recipe:
1. PREP! Cut chicken into strips. Peel and cut potatoes into 1 inch cubes. Cut onions into strips. Mince garlic.
2. In a pan, heat the butter then add garlic and onion. Proceed to add chicken and cook till the meat is no longer pink. (don’t worry the simmer will fully cook the chicken) Toss in the potatoes and let it sit for about a minute.
3. Transfer your meat, potatoes, and onions into a pot and add chicken stock. Bring to a boil then add curry & cumin mixture into the pot and simmer for 25 mins on low heat. Add salt and pepper to your desired taste. The potatoes should start breaking down and thickening your curry broth, so no corn starch needed. Serve over fresh steamed rice and DONE!

Shrimp spaghetti, bacon baked potato, and fresh bruschetta

For our next post, we take our world into an Italian fusion.. Not quite as simple but definitely worth it!

Ingredients:

● Shrimp Angelhair Spaghetti
– 1/4 of a pack of Angelhair pasta
– 15 pc. of Shrimp
– Jar of Spaghetti sauce
– 1 clove Garlic & 1/2 of an Onion
– 1 Tsp. Salt
– 1 Tsp. Extra Virgin Olive Oil

● Bacon Baked Potato

– Gold Potato
– Bacon bits (real bacon)
– Fresh Green Onions
– 3Tsp Butter & Salt

● Fresh Bruschetta

– Fresh Baguette bread
– Onions, Tomato & Garlic
– 8 Fresh Basil Leaves
– 1 tsp. Extra Virgin Olive Oil
– Salt and Pepper to taste

(All ingredients shown above)

Spaghetti:

1. Dice the onions and mince the garlic. Butterfly the shrimp.

2. Boil 5 cups of water. Add salt after reaches boiling point then add angelhair pasta. Boil for about 20 mins.

3. In a separate pan, brown garlic and olive oil together then add shrimp and cook thoroughly. (until bright pink) Add diced onions and pasta sauce. Salt and pepper to taste and simmer for 5 mins.

4. When everything is finish plate pasta and DONE!

Bacon Baked Potato:

1. Wash potatoes thoroughly. Dice the green onions. With a fork, poke into the  center of each potato. (helps vent steam so your potato doesn’t explode!)

2. Microwave each potatoe 4 1/2 to 5 mins each.

3. In a separate bowl combine butter, green onions, and bacon bits. Microwave for 30 secs. Stir to evenly melt the butter.

4. Cut potato in half length wise. Add butter mixture and DONE!

Fresh Bruschetta:

1. Dice onions, tomato, and garlic and toss it together in a mixing bowl with a tablespoon of olive oil. Slice basil leaves into fine pieces and mix well.

2. Cut the baguetta bread into 1/2 inch slices and drizzle with extra virgin olive oil. Toss them into a toaster oven and toast till golden.

3. Plate them and DONE!

Simply Chicken Adobo

As our first post we’d like to introduce an easy popular Filipino dish known as Adobo. For those of you out there that are extremist in being lazy, this recipe calls for one pot from start to finish…. Awesome!

Ingredients:

-2 boneless Chicken filets

-1/2 cup Soy Sauce

-1/2 cup Vinegar

-1 Tsp of Veg. oil

-1/2 white Onion

-2 pc. of Bay Leaves

-1 clove of Garlic

Recipe:

1. Cut chicken into cubes/strips. Cut onion into strips. Mince garlic  clove.

2.  Heat a deep pan with oil and fry the garlic and add onions. Cook until the onions are caramelized. Then add chicken and stir fry till cooked.

3. Add soy sauce, vinegar, and bay leaves. Bring to a boil and simmer for 15-20 mins.

4. Serve over rice…

DONE!
